Strange September

A few years ago Greg and I created alliterations for the fall months...not in order to become a self-fulfilling prophecy but because we thought we noticed a trend. After summer was over, it sometimes just felt like things got harder (usually the back-to-school schedule in graduate school added some challenges).

Anyway, there was "Sucky September" (offensive, sorry!), "Odd October," and thankfully a reprieve, "Nice November."  Since I have young ones now I try not to use the word "suck," so I'm swapping it out for Strange September.  And this September has been slightly strange only in that it's been a very different September than any other!

stitches + a sunburn around his eyes = hot mess
Mainly because we are homeschooling two days a week and Mia goes to school two days a week and our weeks feel busy and full and...different.   And I have a little man who likes to throw wrenches into our homeschool days by falling off a chair the very first day of homeschool, cutting his chin, and requiring 6 stitches (hello, trauma!)  I won't lie, that was a really hard day for this mom as well.  Like, immediate crying in the doctor's office when he told me he would require stitches.  I think it's the mama-bear protection instinct when you just ache inside for your little one.

The other wrench a little man threw into our advent into homeschooling/schooling was when he came down with a stomach bug the day before we were to have our family pictures taken with my girl Laura Hinely before she MOVED indefinitely to NYC 2 days later (speaking of, anyone needing some photos in the Big Apple should check her out!). That meant scheduling was priority and we wouldn't have many options or really ANY option to reschedule.  As a mom, of course I wanted my little man to feel better just for his own sake, but I also was hopeful he'd feel better for the pictures' sake as I didn't want this opportunity to pass by!

Well, as I was simultaneously trying to get things ready for our photo shoot and take care of Gabe, I came across the brilliance that is activated charcoal.  I read about activated charcoal on Wellness Mama's blog and how she used it for teeth whitening, and I'll be honest, my pearly whites were more like pearly off-whites.  They needed some love.  Yet I wasn't keen on the Crest White Strips as I tried them before we got married and they made my gums sensitive and felt really chemical-ly.  So I was excited to see that for less than $8, you could buy some 90 capsules to try activated charcoal in order to whiten your teeth! It looks like you have oreos on your teeth at first but it really works.  It's gradual, but it works.
I assumed activated charcoal had other uses and lo and behold, it can be used for stomach bugs (Gabe's very issue)!  So fascinated about it, I wrote this guest post for Modern Alternative Mama about activated charcoal.  You can read it here:

And oh yeah, Gabe recovered in 24 hours and we were thankfully able to get those family pictures made.  Can't wait to see the actual files soon! (These are just screenshots from Laura's computer from her iPhone.)

PS: School has been great for the chiquita!  She's a champ.

Santa Fe Chili - real foodified

One of our favorite chili recipes was introduced to us by our friend Jenn M. on the very day we moved into our house almost 4 years ago! It was so yummy, I immediately asked her for the recipe the next day and shared it with my mom as well.  We enjoy making this every year, but the more I have learned about food and additives, the less I have wanted to use the taco seasoning and ranch seasoning packets it calls for.  Thanks to Pinterest, google, and the interwebs, it fortunately hasn't taken me long to find easy homemade substitutes that DO NOT contain the abominable MSG or maltodextrin.  *Phew!  So now we can consume this chili guilt-free and without the neurotoxic side effect.  I sure hate getting headaches when I eat, don't you!?

Here's the recipe, which I found is originally from TasteofHome.com:

  • 2 pounds ground beef (grass-fed if possible)
  • 1 medium onion, chopped
  • the equivalent of 2 - 15oz cans of kidney beans, soaked (*rinsed & drained)
  • the equivalent of 2 - 15oz cans of black beans, soaked*
  • 3 cans (7 oz each) white shoepeg corn
  • 1 can diced tomatoes, undrained
  • 1 can diced tomatoes & green chilies (e.g., Rotel)
  • 2 servings of homemade ranch seasoning
  • 2 servings of homemade taco seasoning
  • 2 cups water (or homemade chicken stock)
  • Optional garnishes:
    • sour cream, non-GMO corn chips, shredded cheddar cheese

Brown the ground beef, drain.  Add in chopped onion and cook until the onion is soft.  Add in the beans, corn, tomatoes, chilies, seasonings, and water/stock.  Cover & cook on high for about 2 hours.  Serve in bowls with additional garnishes if desired.

*I soaked and cooked dry kidney beans and black beans to include in this recipe.  I used 1.5 cups of soaked beans to substitute for 1 can of beans.  So therefore, I used 3 cups of each type of soaked beans. That's a lot of beans!!!

The general rule of thumb is:
1 15-ounce can of beans equals
  • 1/2 cup dry beans, before cooking
  • 1 1/2 cups beans, after cooking

Enjoy!

Coming up on 12 months...

a sweater for my Caribou mug :)
This week is full of memories for me. It was just a year ago I was getting ready (but didn't know it'd be so soon!) to welcome Gabe into the world.  And I think fall just creates a sense of "good vibes" for everyone.  Even if the leaves don't change very much here, there is a change in the feel outside and everyone, including myself, enjoys the letdown from the constant heat in Florida.  With all the weather changes on the eastern seaboard, it seems we are cooling down over here and everyone's pulling out the sweaters and boots - my kids are no exception.

I've been on the hunt for many things over the past week - items for Gabe's birthday party, halloween costumes, my friend's baby shower, and getting prepped for the holidays to come. It's been a fun time and it's helping me get in the spirit - even if sometimes all the work gets me a tad overwhelmed.  'Tis the season!

We found this wagon at Goodwill last Friday when I was looking for Halloween costumes for Gabe. It was only $3. How could I say no? Now I'm curious about finding a bigger wagon I can pull both of them in.  It's been a hit around here.

We got some new boots for Mia. It was time for an upgrade.  Girl must know fashion because she was insistent on wearing them almost immediately.  These are from Target, available in dark brown and black. (pictured: dark brown)

My old roomies are both pregnant and would you know there are 3 babies in this picture? Yes, LP is having twins!! Both a boy and a girl. Andrea is due in March, expecting a little chica!

More babies!! My 2nd oldest brother and his wife Allison welcomed baby McKaber "Mack" last week. He is so cute, although we need to visit him again really soon.  He was only hours old in this picture.  Can't believe Gabe is just about a year older than his cousin...it won't be very long till hopefully he and Mack are palling around!

In other news, Gabe's birthday and party are this Saturday!  Once he is officially 1, I think it will feel a little strange to think of him no longer as a baby - but he is still a baby to me!  I am starting to see some toddler behavior break through though - little outbursts here or there when he doesn't get what he wants, a little back-arching, and wanting to be on the move all the time.  It used to be when we shopped, Mia was the tricky one to handle and Gabe would just lay in his carseat or calmly sat in the infant seat.  Now, he is squirming to get out and Mia is telling me what she thinks looks good or what she wants. Jr. Shopper & Jr. Mover.  That's what we have going on right now.  Shopping trips may need to be reevaluated in the future and Gabe might be riding in the babyhawk lest he finagle his way out of the straps in the cart and topple out! :-O
Or, I just might not go shopping ever anymore.  Probably the best solution for all of us.  ;)
